Irish Inspired Beef Pie

Just in time for St. Patrick's day, we are sharing this easy recipe for an Irish inspired beef pie.  Perfect when paired with a salad, it is something a bit different from the usual corned beef and cabbage.

Irish Hand Pies

Ingredients:

1lb ground sirloin
½ head of cabbage (about 2 cups)
2 tbs. olive oil
1.4 lb red potatoes
2 carrots
½ onion
2-3 cloves of Garlic
1 tbsp. fresh thyme
1 tbsp. fresh rosemary
1 cup beef broth
3 tbsp tomato paste
1 tsp Worcestershire Sauce
1 tbsp. flour
Egg wash (optional)

Pie Crust.  We like Martha Stewart’s Pate Brisee. You can use store bought dough if in a rush

Shred the cabbage, then dice the potatoes, carrots and onions.  Chop the herbs and garlic.  Heat oil over medium heat in a large pan.  Add the vegetables and cook for about 8 minutes or until the vegetables begin to soften.  Add the beef to the pan, breaking it up and combining with the vegetables.  Season with salt and pepper.  When cooked through, add the beef stock, Worcestershire sauce, tomato paste and combine.  Sprinkle the flour over the mixture and combine. Cover the pan and let cook for about 10 minutes.  After cooking, let the pie filling cool.

Preheat Oven to 350.  On a floured surface roll the dough out and place in the pie pan.  Fill the pie to the brim with the beef mixture.  Add a bit of water around the rim of the bottom pie crust and then put another rolled out crust on top.  Trim the excess from the edges, but leave enough to roll under (see video).  Crimp the edges of the crust.  Brush the top with egg wash, and slice a few venting holes in the top with a knife.  Bake for 30 minutes, or until golden brown.

You can also make individual portions by making these into hand pies instead.  Roll the dough out and cut out individual circles using a 5.5" circular cutter.  Fill with a couple tablespoons of filling, then fold the dough over and pinch together with a fork.  Bake these for about 12 minutes, or until golden brown.
