Angie's Favorite Spinach Salad Recipe

Here is one of Angela Leoni's favorite salad recipes!  It serves as a perfect side dish or a tasty lunch.

1/4 cup of oil

1 small garlic clove, crushed or finely minced

2 to 4 slices of crumbled bacon (about 3 tablespoons)

2 tablespoons of wine vinegar

1/2 tsp. Dijon mustard or 1/4 tsp. dry mustard

1/4 tsp. salt

Pepper to taste

2 tablespoons grated Parmesan cheese

about 1/2 bunch of fresh spinach

Top the spinach with egg, bacon and parmesan.

For the dressing:
Combine the oil, garlic, vinegar, mustard, salt and pepper and pour over the salad.  Enjoy!
